From there, it spread to other parts of Asia, including Japan, Korea, and India, before making its way to Europe and the Americas. Buckwheat was a staple crop in many cultures and was particularly popular in Russia, where it was known as “grechka” and used to make porridge and other dishes. In the United States, buckwheat was introduced in the 17th century by Dutch settlers and quickly became a popular crop in the northeastern states. Today, buckwheat is grown in many parts of the world and is used for a variety of purposes, including as a cover crop, as animal feed, and for human consumption in the form of flour, noodles, and other food products.
